Recipe: Rhubarb, Orange and Rosemary Cake

When I am feeling miserable, Mum will make me a rhubarb, orange and rosemary cake, and so now this recipe is associated for me with a hug, a cup of tea, and the smell of buttery almond-meal drifting from the oven. Admittedly, Mum does tell me to look away while she adds the (frankly ludicrous amounts of) sugar and butter, but as we both know, this isn’t the sort of cake to be stingy on, which means I usually comply.

This cake is also gluten free, in addition to being oh-so-delicious, so I have had quite a few requests for the recipe from celiac friends who have also loved it.

Store this one away for when you (or someone you love) needs cheering up.
